Chicken

  • 6 pieces bone-in skin-on chicken thighs

    Approximately 1 kg (2.2 lb) total

  • 1 ½ tsp salt

    Adjust to taste

  • ½ tsp black pepper

    Adjust to taste

  • 1 tsp dried oregano

Caramelised Onion

  • 2 tbsp olive oil

    Enough to coat the pan for searing and sautéing

  • 1 large large onion, sliced

    Approximately 250 g (9 oz)

  • 8 cloves garlic cloves
    , left whole or lightly crushed

    Use 6–8 large cloves

  • 50 g brown sugar

    Approximately 0.25 US cup

    Season the chicken thighs generously on both sides with the salt, black pepper and dried oregano. Pat the seasoning into the skin to help it stick.

    Heat a drizzle of olive oil in a large frying pan over medium-high heat. Once hot, place the chicken thighs skin-side down into the pan. Sear for about 3 minutes per side until nicely golden brown. Transfer the seared chicken to the slow cooker.

    Tip: Don't skip this step — searing adds wonderful colour and flavour to the finished dish.

    Reduce the heat to medium and add the sliced onion to the same pan (add a little more oil if needed). Sauté the onion for 10 to 15 minutes, stirring occasionally, until the onion is soft and beautifully caramelised.

    Add the garlic cloves and brown sugar to the caramelised onions. Stir everything together and sauté for 1 more minute until fragrant and the sugar has melted. Transfer the onion mixture over the chicken in the slow cooker.

    Place the lid on the slow cooker and cook on Low for 6 hours or on High for 4 hours, until the chicken is fall-off-the-bone tender and cooked through.

    Tip: The chicken is done when it reaches an internal temperature of 74°C (165°F).

    Carefully remove the chicken thighs from the slow cooker. Spoon the sweet caramelised onion sauce over the top and serve immediately with your choice of sides.
