Ingredients
Main
- 4 pieces chicken breasts, boneless, skinless
Approximately 680g (1.5 lb) total
- 120 ml chicken broth
Use a good-quality stock or homemade
- 1 tbsp olive oil
Seasoning
- 1 tsp salt
- ½ tsp paprika
- ½ tsp black pepper
- 1 tsp Italian seasoning
A blend of dried oregano, basil, thyme, and rosemary works well as a substitute
Method
- 1
In a small bowl, mix together the salt, paprika, black pepper, and Italian seasoning until well combined.
~2 mins - 2
Rub the olive oil evenly over each chicken breast, then sprinkle the seasoning mixture generously over all sides of the chicken.
~3 mins - 3
Pour the chicken broth into the bottom of the slow cooker. Place the seasoned chicken breasts in a single layer in the slow cooker, ensuring they are not stacked on top of each other.
~1 minTip: Arranging in a single layer ensures even cooking
- 4
Place the lid on the slow cooker and cook on Low for 3-4 hours or on High for 2-3 hours, until the chicken reaches an internal temperature of 74°C (165°F).
~4 hrsTip: Cooking times may vary depending on the size and thickness of the chicken breasts. Avoid overcooking as chicken breast can dry out.
- 5
Once cooked, remove the chicken from the slow cooker and allow it to rest for 5 minutes before slicing or shredding. Serve as desired.
~5 minsTip: The cooking liquid can be spooned over the chicken for extra moisture and flavour

Frequently Asked Questions
It's best to thaw the chicken breasts before placing them in the slow cooker. Using frozen chicken can result in uneven cooking and may keep the meat in the temperature 'danger zone' for too long. Defrost thoroughly in the fridge overnight for the best and safest results.
