These beef pot roast French dip sandwiches are restaurant-quality comfort food made easy in your slow cooker. A generous chuck roast is cooked low and slow with aromatic vegetables, herbs, and a savoury blend of beef broth, red wine, Worcestershire and soy sauce until perfectly tender. The meat is then piled onto buttered, toasted hoagie rolls topped with Swiss cheese, with the cooking liquid strained and reserved as an irresistible Au Jus for dipping. Beef & Base

  • 2 kg Chuck roast

    Choose a 4โ€“5 lbs roast as per original recipe; trimmed weight is approximately 2 kg

  • 1 tsp Salt

    To taste

  • ยฝ tsp Black pepper

    To taste

  • 2 tbsp Olive oil

    For browning the meat

Aromatics & Liquid

  • 1 whole Onion, sliced
  • 6 cloves Garlic cloves
    , minced
  • 480 ml Beef broth
  • 120 ml Red wine
  • 2 tbsp Worcestershire sauce
  • 2 tbsp Soy sauce

Spices & Herbs

  • 1 tsp Dried thyme
  • 1 tsp Dried rosemary
  • 1 tsp Dried parsley
  • 1 tsp Dried oregano
  • 1 tsp Chilli powder
  • ยฝ tsp Cumin
  • ยฝ tsp Red pepper flakes
  • 2 leaves Fresh bay leaves

For Serving

  • 6 rolls Hoagie rolls

    Toast just before serving

  • 3 tbsp Butter, melted

    For toasting rolls

  • 200 g Swiss cheese, sliced

    Add to assembled sandwiches before serving

Method

    Pat the chuck roast dry and season generously all over with salt and black pepper.

    Heat the olive oil in a large frying pan over medium-high heat. Brown the roast on all sides for 2โ€“3 minutes per side until deeply caramelised. Transfer to your slow cooker.

    Tip: Browning adds depth of flavour to the final dish

    Add the sliced onion and minced garlic to the slow cooker around the beef.

    Pour in the beef broth and red wine. Add the Worcestershire sauce and soy sauce, stirring to combine.

    Sprinkle over the thyme, rosemary, parsley, oregano, chilli powder, cumin, and red pepper flakes. Add the bay leaves.

    Cover and cook on Low for 8 hours or on High for 5 hours, until the beef is very tender and easily shreds with a fork.

    Tip: Cooking time depends on the size and thickness of your roast

    Remove the beef from the slow cooker and transfer to a cutting board. Let rest for 5 minutes, then shred or slice the meat into bite-sized pieces.

    Strain the cooking liquid through a fine sieve into a bowl, discarding the solids. This is your Au Jus sauce. Taste and season with additional salt and pepper if needed.

    Brush the hoagie rolls with melted butter and place under a hot grill or in a toaster oven for 2โ€“3 minutes until golden and crispy.
