Slow Cooked Lamb Shanks | One Pot Chef
These slow cooked lamb shanks transform an affordable cut of meat into something truly special. The shanks are coated in seasoned flour and browned in a pan to develop rich flavour before being transferred to the slow cooker with stock, garlic, bay leaves, and Italian herbs. After hours of gentle braising, the meat becomes incredibly tender and pulls away from the bone. Serve them whole on a bed of creamy mashed potato with seasonal vegetables, or strip the meat for salads and wraps.

Mixed into the flour for seasoning
Method
- 1
In a shallow bowl or plate, combine the plain flour with a generous pinch of salt and pepper. Mix well to create your seasoned flour.
~2 mins - 2
Dredge each lamb shank in the seasoned flour, ensuring they are well coated on all sides. Shake off any excess flour.
~3 mins - 3
Heat the olive oil in a large frying pan over medium-high heat. Brown the lamb shanks on all sides until they develop a golden crust. This step adds wonderful flavour, so don't skip it.
~10 minsTip: You may need to brown the shanks in batches depending on the size of your pan.
- 4
Place the browned lamb shanks into your slow cooker. Add the crushed garlic, bay leaves, and mixed Italian dried herbs.
~2 mins - 5
Pour the stock over the lamb shanks. The liquid should come roughly halfway up the shanks โ there's no need to submerge them fully as the slow cooker will retain moisture.
~1 min - 6
Place the lid on the slow cooker and cook on HIGH for approximately 8 hours, until the meat is very tender and falling off the bone.
~8 hrsTip: Check after 6 hours โ cooking time may vary depending on the size of your shanks and your slow cooker.
- 7
Carefully remove the lamb shanks from the slow cooker. Discard the bay leaves. You can serve the cooking liquid as a gravy โ if you'd like it thicker, strain it into a saucepan and simmer on the hob until reduced.
~5 mins - 8
Serve the lamb shanks whole on the bone with creamy mashed potato and steamed vegetables, or strip the meat from the bone for salads, wraps, or pasta.
