Main

  • 1.2 kg Chicken breasts or thighs, boneless and skinless, trimmed

    4-6 pieces depending on size

Seasonings & Aromatics

  • 8 cloves Garlic cloves
    , minced
  • 2 tsp Italian seasoning (dried)
  • ½ tsp Salt

    to taste

  • ¼ tsp Black pepper (ground)

    to taste

Liquid

  • 240 ml Chicken stock

    low-sodium preferred

Optional

  • 15 ml Olive oil(optional)

    for browning chicken before slow cooking

Garnish & Finish

  • 15 g Fresh parsley or basil
    , chopped(optional)

    Add in final 15 minutes of cooking

  • 50 g Grated Parmesan cheese(optional)

    Add just before serving

Method

    If desired, heat olive oil in a large frying pan over medium-high heat. Season the chicken with salt and pepper, then brown on both sides for 2-3 minutes each side for enhanced flavour. This step is optional but recommended.

    Place the chicken into your slow cooker (crock pot).
