Ingredients
Main
- 600 g Chicken breasts or thighs, diced into bite-sized pieces
Browning the chicken before adding improves flavour
- 1200 ml Chicken stock
Reduced from standard stovetop amount to account for slow cooker moisture retention
- 200 g Egg noodles or small pasta
Add in the final 30 minutes of cooking to prevent overcooking
Vegetables
- 300 g Carrots, sliced into thin rounds
- 150 g Celery stalks, diced
- 200 g Onion, diced
Seasoning
- 1 tsp Salt
Adjust to taste
- ½ tsp Black pepper, freshly ground
Adjust to taste
Flavouring
- 30 g Fresh parsley, roughly chopped(optional)
Add just before serving
Or use dried parsley if fresh is unavailable
- 1 tbsp Fresh thyme, fresh sprigs(optional)
Add in the final 30 minutes of cooking
Or 0.5 tsp dried thyme

If desired for enhanced flavour, heat a little oil in a frying pan and quickly brown the diced chicken on all sides. This step is optional but recommended.

Place the chicken (browned or raw), carrots, celery, and onion into your slow cooker. Pour in the chicken stock.
