Units:

Main

  • 300 g dried green or brown lentils, rinsed and drained
  • 1 large onion, diced
  • 3 medium carrots, peeled and diced
  • 3 stalks celery stalks, diced
  • 4 cloves garlic cloves
    , minced
  • 400 g tinned chopped tomatoes

    1 standard tin

  • 1 litre vegetable stock

    Use low-sodium if preferred

  • 1 tbsp olive oil
  • 2 leaves bay leaves(optional)

    Remove before serving

Spices

  • 1 tsp ground cumin
  • 1 tsp smoked paprika
  • ½ tsp ground turmeric(optional)
  • 1 tsp salt

    Adjust to taste

  • ½ tsp black pepper

Garnish

  • 2 tbsp fresh parsley or coriander
    , chopped(optional)

    Add when serving for freshness

  • 1 tbsp lemon juice(optional)

Squeeze in just before serving to brighten the flavour

Method

  1. 1

Rinse the lentils under cold running water and drain well. Set aside.

    ~3 mins
  2. 2

Dice the onion, carrots, and celery. Mince the garlic cloves.

    ~10 mins
  3. 3

Add the rinsed lentils, diced onion, carrots, celery, garlic, tinned tomatoes, vegetable stock, olive oil, cumin, smoked paprika, turmeric, salt, pepper, and bay leaves to the slow cooker. Give everything a good stir to combine.

    ~5 mins
  4. 4

Place the lid on the slow cooker and cook on Low for 8 hours or High for 4 hours, until the lentils are completely tender and the soup has thickened.

    ~8 hrs

Tip: The soup will thicken as it cooks. If it's too thick, stir in a splash of hot water or stock.

  5. 5

Remove and discard the bay leaves. Taste and adjust the seasoning with more salt and pepper if needed.

    ~2 mins
  6. 6

For a smoother soup, use a stick blender to partially blend to your desired consistency. Alternatively, leave it chunky.

    ~3 mins
    Optional step

Tip: Blending about half the soup gives a lovely thick texture whilst keeping some whole lentils for interest.

  7. 7

Ladle into bowls and finish with a squeeze of lemon juice and a sprinkle of fresh parsley or coriander. Serve with crusty bread.

    ~2 mins

Frequently Asked Questions

Green or brown lentils hold their shape well during the long cooking time and give a lovely texture. Red lentils will also work but they break down completely, resulting in a smoother, thicker soup. Avoid using puy lentils as they can stay quite firm.
