Ingredients
Main
- 300 g dried green or brown lentils, rinsed and drained
- 1 large onion, diced
- 3 medium carrots, peeled and diced
- 3 stalks celery stalks, diced
- 4 cloves garlic cloves, minced
- 400 g tinned chopped tomatoes
1 standard tin
- 1 litre vegetable stock
Use low-sodium if preferred
- 1 tbsp olive oil
- 2 leaves bay leaves(optional)
Remove before serving
Spices
- 1 tsp ground cumin
- 1 tsp smoked paprika
- ½ tsp ground turmeric(optional)
- 1 tsp salt
Adjust to taste
- ½ tsp black pepper
Garnish
- 2 tbsp fresh parsley or coriander, chopped(optional)
Add when serving for freshness
- 1 tbsp lemon juice(optional)
Squeeze in just before serving to brighten the flavour
Method

Rinse the lentils under cold running water and drain well. Set aside.

Dice the onion, carrots, and celery. Mince the garlic cloves.

Add the rinsed lentils, diced onion, carrots, celery, garlic, tinned tomatoes, vegetable stock, olive oil, cumin, smoked paprika, turmeric, salt, pepper, and bay leaves to the slow cooker. Give everything a good stir to combine.

Place the lid on the slow cooker and cook on Low for 8 hours or High for 4 hours, until the lentils are completely tender and the soup has thickened.
~8 hrsTip: The soup will thicken as it cooks. If it's too thick, stir in a splash of hot water or stock.

Remove and discard the bay leaves. Taste and adjust the seasoning with more salt and pepper if needed.

For a smoother soup, use a stick blender to partially blend to your desired consistency. Alternatively, leave it chunky.
