Ingredients
Main
- 1 â…ś kg pork roast
Use a pork loin, pork tenderloin, or pork butt. Tenderloin will require less cooking time.
Vegetables
- 4 whole carrots, peeled and cut into large pieces
Use as many or as few as your family will eat
- ½ whole onion, diced into large pieces
Any variety works; red onion used in original recipe
Liquid
- 950 ml chicken broth
Water or water with bouillon cubes can be substituted
Seasonings
- 5 g garlic, minced
Jarred minced garlic is convenient
- 3 g Italian seasoning
- 3 g salt
- 3 g pepper
Freshly ground recommended
Gravy
- 60 ml water
Add in final 10 minutes of cooking with cornstarch to make gravy
- 30 g cornstarch
Mix with water to make slurry and add in final 10 minutes
Creates silky gravy from pan juices

Place the pork roast into the slow cooker.

Add the peeled and chopped carrots and the diced onion pieces around the roast.

Pour the chicken broth (or water) over the roast and vegetables.

Sprinkle the minced garlic, Italian seasoning, salt, and pepper evenly over the roast and vegetables.

Cover the slow cooker and cook on Low for 6-8 hours, or on High for 4-5 hours.
~7 hrsTip: Cooking time depends on the size and type of roast. Pork tenderloin cooks faster than a larger roast. Cook longer if you prefer the meat to shred easily; cook less time if you prefer sliceable meat.

In the final 10 minutes of cooking, mix the cornstarch with the 60 ml of water to create a smooth slurry. Stir this into the hot cooking liquid in the slow cooker.
