These zesty chicken tacos make a great change from your usual “chicken
night” dinner. Serve with Spanish rice or pinto beans for a tasty,
1.5 lb (700 g)
boneless, skinless chicken breasts
soft flour tortillas
shredded cheddar cheese
Place chicken in slow cooker.
Stir together chili powder and lime juice and pour over top of
chicken. Cover and cook on Low setting for 5 to 6 hours, or until
chicken is tender.
Take chicken out of slow cooker and set aside.
Drain juices from slow cooker
Shred chicken with two forks and return it to slow cooker.
Stir in salsa and corn. Cover and cook for another 30 minutes,
or until salsa and corn are heated through, stirring occasionally.
Serve in taco shells or flour tortillas along with lettuce,
cheese, and sour cream.
