Easy Zesty Chicken Tacos for Slow Cooker

These zesty chicken tacos make a great change from your usual “chicken
night” dinner. Serve with Spanish rice or pinto beans for a tasty,
satisfying meal.
Ingredients:
- 700g (1˝lbs) boneless skinless chicken breasts
- 1 tablespoon chili powder
- 3 tablespoons lime juice
- 1 cup salsa
- 1 cup frozen corn
- Taco shells or soft flour tortillas
- Lettuce, shredded cheese, and sour cream for garnish
Steps:
- Place chicken in slow cooker.
- Stir together chili powder and lime juice and pour over top of
chicken. Cover and cook on Low setting for 5 to 6 hours, or until
chicken is tender.
- Take chicken out of slow cooker and set aside.
- Drain juices from slow cooker
- Shred chicken with two forks and return it to slow cooker.
- Stir in salsa and corn. Cover and cook for another 30 minutes,
or until salsa and corn are heated through, stirring occasionally.
- Serve in taco shells or flour tortillas along with lettuce,
cheese, and sour cream.
