The other slow cooker vegetable type recipe I have for you is
vegetable chilli. This meal is best served on those cool nights. It will
take you about 20 minutes to prepare everything you need and it is ready
in a little over eight hours.
Ingredients:
1 can of whole peeled tomatoes in juice
1 can of garbanzo beans that are drained
2 zucchini thinly sliced
1 onion chopped
2 carrots
2 stalks of celery
1 red bell pepper – chopped
1/3 cup of chili powder
1 can of green chile peppers
2 cloves of garlic
1 Tablespoon of dried oregano
2 teaspoons of ground cumin
1 teaspoon of salt
Combine all of the ingredients in your slow cooker and cover. Cook on
low for about six to eight hours or if you want a faster product then
cook high for three to four hours. I highly recommend slow cooker liners
that you can buy at just about any merchant to line your slow cooker. It
keeps you from having too big of a mess to clean up afterwards. Enjoy
these two lovely vegetable meals; I know I do!
