This dish is best if served with vegetables and sauce. A great way to enjoy turkey.

Ingredients

  • 12 oz (340g) orange sweet potato cut into 2 cm (1 inch) pieces
  • 3 lb (1.5kg) frozen turkey breast roll
  • 2 zucchini cut into 2 cm (1 inch) pieces
  • 1 onion cut into wedges
  • cup white wine or pernod
  • cup redcurrant jelly
  • cup chicken stock
  • 1 tablespoon cornstarch

Steps:

  • Follow the instruction in the packet to thaw the turkey.
  • Take the elastic string off the turkey and tie up with kitchen string securely.
  • Place the turkey in the slow cooker.
  • Put the sweet potato and onion around the turkey.
  • Pour in the stock and wine.
  • Cook for 4 hours on Low.
  • Add the redcurrant jelly and zucchini.
  • Take off the lid and cook for another 30 minutes on High.
  • Place the turkey to a plate, cover and keep warm.
  • Mix 1 tablespoon of water and cornflour in a bowl.
  • Stir well until smooth.
  • Add the cornflour mixture to the slow cooker.
  • Cook for another 10 minutes on High.
  • Slice and serve.
