Tomato Spinach and Risoni Soup

There is nothing more satisfying than having a soup for breakfast.

Ingredients

  • 2oz (50g) English spinach leaves trimmed
  • 2 cups tomato passata (pureed tomatoes) (pureed tomatoes)
  • 1 leek sliced thinly (white part only)
  • 1 cup risoni
  • 1 garlic cloves crushed
  • teaspoon ground cumin
  • 10 oz (280g) smoked ham chopped
  • 3 cups chicken or vegetable stock
  • 1 tablespoons lemon juice

Steps:

  • In a slow cooker, place the leek, passata, garlic, cumin, stock and 2 cups of water.
  • Cover and cook for 3 hours on Low.
  • In a heatproof bowl, soak the risoni in a boiling water for about 10 minutes.
  • Add the risoni to the slow cooker.
  • Add the ham and cook for another 30 minutes.
  • Add the lemon juice and spinach. Stir.
  • Sprinkle with salt and pepper.
  • Serve.
