The good thing about this soup is that, it brings out the best taste of chicken.

Ingredients

  • 19 oz (550g) boneless, skinless chicken breasts
  • 2 x 2.3 inch (6 cm) piece galangal sliced
  • 4 makrut or kaffir lime leaves torn
  • 3 teaspoons grated palm sugar or brown sugar
  • 2 cups coconut milk
  • 2 tablespoons fish sauce
  • 1 cup chicken stock
  • 1 tablespoon chopped coriander
  • 1-2 teaspoons chopped red chilli
  • 1 tablespoons lime juice
  • cilantro leaves and stems root, rinsed
  • coriander leaves (to garnish)

Steps:

  • In a slow cooker, place the coconut milk, galangal, coriander root, chilli, stock and half the lime leaves.
  • Simmer for 1 hours on Low.
  • Meanwhile cut the chicken into thin strips, remove any fat.
  • Add the palm sugar, fish sauce, lime juice and chicken strips to the slow cooker.
  • Cook for another 5 to 10 minutes.
  • Add the remaining lime leaves and stir.
  • Pour the soup into the serving bowls.
  • Garnish with coriander leaves and serve.
