A delicious curry for slow cooker, a good way to remove all the stress of a hectic day.


  • 14 oz (400g) can of coconut milk
  • 4.4 lbs (2 kg) short ribs or brisket cut into large chunks
  • fresh coriander
  • 50 ml (1.6 fl oz) rice wine
  • 2-3 tablespoons groundnut oil
  • 3 garlic cloves chopped
  • 2 stalks of lemongrass chopped 1 stalk and bashed the other 1
  • 2 tablespoons brown sugar or palm sugar
  • 1-2 green chillies deseeded and chopped roughly
  • 50 ml (1.6 fl oz) fish sauce
  • 1 x 2.5 cm (1 inch) ginger peeled and chopped
  • 6 kaffir lime leaves
  • juice of 2 lime
  • 2 star anise
  • wedges of lime to serve


  • Brown the beef in batches in a large pan with oil.
  • Transfer the beef to a plate, reserving the juice.
  • Place half the coriander, garlic, chopped lemongrass, chillies and ginger in a mini processor.
  • Add the rest of oil and process until rough paste.
  • Place the paste in the slow cooker and heat for few minutes on high.
  • Add the beef and the remaining ingredients except from the lime juice and the remaining coriander.
  • Cook for 8 hours on low heat until meat is soft.
  • Remove the bones and shred the meat using forks.
  • Strain the sauce if its too thin, boil to reduce.
  • Add the lime juice and the remaining coriander.
  • Season with sugar and fish sauce to taste.
