Slow Cooker Size 3.5L+

Cooking time: 8 Hours on high setting

Ingredients:

  • 6 duck legs
  • 1 small pineapple, peeled, cored and cut into chunks
  • 2 tablespoons brown sugar, light
  • 2 tablespoons fish sauce
  • 1 can of coconut milk
  • 1 red chilli, deseeded and sliced
  • 6 kaffir lime leaves
  • Thai basil leaves, to serve (optional)

Steps:

  1. Brown the duck legs in a pan with oil.
  2. Mix the curry paste, fish sauce, coconut milk, lime leaves and sugar in the slow cooker.
  3. Place the duck legs in the slow cooker.
  4. Cover and cook on high for 8 hours.
  5. Take the duck legs off the slow cooker, remove any fat from the sauce.
  6. Stir in the pineapple, basil and half the chilli.
  7. Cover and heat for few minutes.
  8. Add more sugar or fish sauce to taste.
  9. Garnish with basil leaves.
  10. Serve.
