Super Slow Cooker Stuffed Shells

If you’ve been thinking about saving money by going meatless one
night a week, then this is the perfect recipe. It’s so rich and
delicious you won’t miss the meat at all. Served with a full-bodied red
wine, garlic bread, and a green salad, it will be a most enjoyable meal.
Ingredients:
- 1 340g (12oz) packet jumbo pasta shells, cooked and drained
- 1 900g (32oz) jar spaghetti sauce
- 2 cups cottage cheese
- 2 cups shredded mozzarella
- ½ cup grated parmesan cheese
- ½ cup finely chopped onion
- 2 tablespoon Italian seasoning mix (or 1 tablespoon oregano, and 1
tablespoon
basil)
- 1 280g (10oz) packet frozen spinach, thawed, with water
squeezed out
Steps
- Cook shells according to package directions and drain.
- Pour half the jar of spaghetti sauce into slow cooker.
- In a medium bowl, mix together spinach and other ingredients.
- Stuff each shell with the spinach mixture and layer shells in
slow cooker.
- Pour the rest of the spaghetti sauce over the shells.
- Cover and cook on Low setting for 4 hours.
- Garnish with parmesan cheese if desired.
