Super Slow Cooker Stuffed Shells

Preparation time: 30 minutes (includes time for boiling pasta shells)
Slow Cooker Size 4L+

Cooking time: 4 hours LOW setting

If you’ve been thinking about saving money by going meatless one night a week, then this is the perfect recipe. It’s so rich and delicious you won’t miss the meat at all. Served with a full-bodied red wine, garlic bread, and a green salad, it will be a most enjoyable meal.

Ingredients:

  • 1 340g (12oz) packet jumbo pasta shells, cooked and drained
  • 1 900g (32oz) jar spaghetti sauce
  • 2 cups cottage cheese
  • 2 cups shredded mozzarella
  • ½ cup grated parmesan cheese
  • ½ cup finely chopped onion
  • 2 tablespoon Italian seasoning mix (or 1 tablespoon oregano, and 1 tablespoon basil)
  • 1 280g  (10oz) packet frozen spinach, thawed, with water squeezed out

Steps

  1. Cook shells according to package directions and drain.
  2. Pour half the jar of spaghetti sauce into slow cooker.
  3. In a medium bowl, mix together spinach and other ingredients.
  4. Stuff each shell with the spinach mixture and layer shells in slow cooker.
  5. Pour the rest of the spaghetti sauce over the shells.
  6. Cover and cook on Low setting for 4 hours.
  7. Garnish with parmesan cheese if desired.
