Very tasty but not very spicy! It really doesn't need the extra water and probably could be done with half as much coconut milk.
The recipe doesn't say when to add the liquids, but we added them with the dried stuff and it seemed fine. We also fried the chicken with the onions, which the recipe doesn't say.

Ingredients

  • 2 x 10 oz (280g) cans of coconut milk light
  • 26oz (730g) boneless, skinless chicken breasts
  • 2 tablespoons curry powder
  • 2 teaspoons cumin
  • 2 carrots peeled and sliced
  • 1 onions sliced
  • 1 teaspoon turmeric
  • 1 garlic cloves chopped
  • 1 teaspoon pepper
  • 1 potato diced
  • 1 chilli sliced
  • 1 tablespoon chopped ginger
  • 1 can water
  • 1 stalk of lemongrass sliced
  • teaspoon salt
  • teaspoon cinnamon
  • 2 kaffir lime leaves sliced (optional)
  • non-stick cooking spray

Steps:

  • Cut the chicken into 2 cm (1 inch) chunks.
  • In a non-stick pan, brown onion using the oil spray.
  • Place all the dried ingredients in the slow cooker. Mix well until combined.
  • Cover and cook for 9 hours over low heat.
  • Sprinkle with fresh coriander and serve.
  • Add rice and chutney if desired.
