Slow Cooker Size 3.5L+

Cooking time:

Ingredients

  • 1 cups chopped onions
  • 4 cups baking potato diced and peeled
  • 3 cups vegetable stock
  • 2 cups milk
  • 4 oz (110g) thinly sliced smoked salmon chopped

Steps:

  • On a medium setting, heat large greased frying pan.
  • Add onion and cook for 8 minutes, continuous stirring until softened.
  • Transfer to 3.5 to 4L slow cooker
  • Add stock (broth) and potato. Cover and cook for 5 to 6 hours on Low or 2 to 3 hours on high until potato is tender.
  • Using a blender, mix and blend the potato mix in batches.
  • Add the smoked salmon and milk. Cover and cook for 15 minutes on High until heated through.
  • Sprinkle generous amount of salt and pepper to taste.
  • Stir, pour into cups and serve.
