Cooking time: 8 hours total (7 hours + 1 hour) on Low setting

If you substitute soy milk and margarine for milk and butter, this dish becomes vegan. Itís terrific served with couscous, and sliced melon in season.

Ingredients:

  • 2 340g (12oz) cans whole kernel corn, drained
  • 3 cups vegetable broth
  • 3 potatoes, diced
  • 1 large onion, diced
  • 1 clove garlic, minced
  • 2 red chili peppers, chopped
  • 1 tablespoon chili powder
  • 2 teaspoons salt
  • 1 tablespoon parsley
  • black pepper to taste
  • 1 ĺ cups milk
  • ľ cup butter
  • Lime wedges for garnish

Steps:

  1. Place all ingredients except for milk and butter into slow cooker. Cover and cook on Low setting for 7 hours.
  2. Using a stick blender, puree the mixture in the slow cooker until itís all pureed. Stir in milk and butter. Cover and cook on Low setting for another hour. Serve with lime wedges.
