  • 500 g (17 oz) lean lamb neck fillet cut into cubes
  • 1 lamb or vegetable stock cube
  • 2 sticks of cinnamon, broken in half
  • 1 tablespoon olive oil
  • 250 g (8 oz) basmati rice
  • 12 dried apricots (ready to eat)
  • 1 onion (large) cut in half and sliced
  • handful amount of almonds or pine nuts
  • handful amount of fresh mint leaves, chopped


  1. In a large pan, dry-fry the almonds or nuts until lightly toasted.
  2. Put into a plate and set aside.
  3. In the same pan, heat oil and fry the cinnamon and onion for about 5 - 10 minutes.
  4. Bring the heat up then add the lamb and fry until browned.
  5. Place into the slow cooker.
  6. Stir in the rice then add the stock cube, apricots and water.
  7. Cover and cook for 3 to 4 hours over low heat.
  8. Toss in the mint and nuts to serve.
