  • 2 tablespoons chopped parsley
  • teaspoon salt
  • 2 tablespoons honey
  • cup sun-dried tomatoes in oil, drained and sliced
  • 1 cups liquid chicken stock (prepared chicken broth)
  • 1 medium size carrot, chopped
  • 2 medium size onions cut into 8 wedges each
  • 900g (2 lbs) lamb stewing meat
  • 3 tablespoons plain flour


  1. In a large re-sealable freezer bag, measure flour and add of lamb. Seal the bag and toss until coated.
  2. Do the same process with the remaining lamb. Put the lamb into 3.5-4L slow cooker.
  3. Sprinkle with remaining flour.
  4. Add onions, carrots, liquid chicken stock, sun-dried tomatoes, honey and salt. Stir thoroughly.
  5. Cover and cook for 8 to 10 hours on Low or 4 to 5 hours on High.
  6. Skim and discard any fat from surface of liquid in slow cooker.
  7. Add parsley, stir thoroughly and serve.
