  • cup boiling water
  • cup instant white rice
  • cup onion, finely chopped
  • cup grated carrot
  • cup corn kernels
  • teaspoon Worcestershire sauce
  • teaspoon horseradish
  • teaspoon salt
  • 1/8 teaspoon pepper
  • 225g ( lb) lean beef mince
  • 4 medium green capsicum
  • 280ml (10 oz) can of condensed tomato soup


  1. Put rice in a rice bowl and pour boiling water over it. Cover and let stand for 5 minutes.
  2. Add onion, carrots, corn kernels, Worcestershire sauce, horseradish, salt, and pepper and mix well.
  3. Stuff the capsicums with the rice mixture and place in a 5L slow cooker.
  4. Spoon the soup over the top and around the capsicums. Cover and cook on low for 7-9 hours, or on high for 3 to 4 hours.
