  • 500 ml (17 fl oz) chicken or vegetable stock
  • 2 lamb shanks
  • 4 cloves garlic, sliced
  • 400 g (14 oz) can of chopped tomatoes
  • 3 onions, sliced
  • 1 tablespoons of olive oil
  • 1 tablespoon cumin and coriander seeds, crushed
  • 4 dried figs, chopped
  • 4 dried apricots, chopped
  • cinnamon stick
  • 2 tablespoons pomegranate molasses
  • pinch of chilli flakes
  • handful amount of coriander, chopped


  1. Heat oil in a frying pan and cook the shanks until brown.
  2. Transfer the shank into the slow cooker.
  3. Add the all the ingredients except for the coriander.
  4. Cover and cook for 9-10 hours on Low heat.
  5. Take the lamb off the slow cooker.
  6. Wrap the lamb with foil then keep warm.
  7. Bring the lamb back to heat and cook the juices until thick.
  8. Season to taste.
  9. Spread the coriander to the sides then serve.
