Cooking time: 2 -3 hours on high or 5-6 hours on Low


  • 1 cups onion, finely chopped
  • 4 cups baking potato, diced and peeled
  • 3 cups liquid vegetable stock
  • 2 cups milk
  • 115g (4 oz) thinly sliced smoked salmon, chopped


  1. On a medium setting, heat large greased frying pan.
  2. Add onion and cook for 8 minutes, continuous stirring until softened.
  3. Transfer to 3.5 to 4L slow cooker
  4. Add stock (broth) and potato. Cover and cook for 5 to 6 hours on Low or 2 to 3 hours on high until potato is tender.
  5. Using a blender, mix and blend the potato mix in batches.
  6. Add the smoked salmon and milk. Cover and cook for 15 minutes on High until heated through.
  7. Sprinkle generous amount of salt and pepper to taste.
  8. Stir, pour into cups and serve.
