  • 340g ( lb) Italian sausage (hot or mild, with no casing)
  • 800g (28 oz) diced tomatoes in can (with juice)
  • 4 cups lightly packed kale leaves, chopped
  • cup basil pesto
  • 540g (19 oz) can of black-eyed peas


  1. In a large frying pan, scramble-fry the sausage for 10 minutes over medium heat.
  2. Drain and transfer the sausage to a 4 to 5L slow cooker.
  3. Add the kale leaves, diced tomatoes, black-eyed peas and 4 cups of water. Stir.
  4. Cover and cook for 9 to 10 hours on low or 4 to 5 hours on high.
  5. Break the mixture up using potato masher.
  6. Add pesto and stir.
