A saucy treat good for two. A perfect dish for lunch or dinner.


  • 250 ml (8.4 fl oz) chicken stock
  • 7 oz (200g) pack of mixed vegatables (peas, sliced courgette, broccoli and broad beans)
  • 2 chicken breast with skin on
  • 7 oz (200g) potatoes sliced thinly
  • 1 tablespoon olive oil
  • 2 tablespoons crème fraiche
  • tarragon leaves chopped roughly


  • In a frying pan with oil, brown the chicken with skin-side down.
  • Turn the chicken over then add the potatoes.
  • Stir well to coat.
  • Place the potatoes at the bottom of the slow cooker.
  • Cover with chicken, then pour in the stock.
  • Cover and cook for one and a half hour over high heat.
  • Take the chicken off the slow cooker.
  • Stir in the vegetables.
  • Bring the chicken back to the slow cooker and cook for another hour.
  • Add the creme fraiche.
  • Serve.
