Cooking time: 8-10 hours on Low or 4-5 hours on High

Ingredients:

  • teaspoon pepper
  • teaspoon salt
  • 1 medium size parsnip
  • 8 cups liquid vegetable stock (prepared vegetable broth)
  • 3 medium size potatoes, peeled and chopped
  • 3 cups onion, chopped
  • 2 cups celery root, peeled and chopped
  • 2 cups carrot, chopped
  • 2 cups sweet potato, chopped

Steps:

  1. Place all the ingredients in 5 to 7L slow cooker.
  2. Cover and cook for 8 to 10 hours on low or 4 to 5 hours on high.
  3. Place the mixture in a blender and carefully process until smooth.
  4. Pour into cups and serve.
