Slow Cooker Pork Recipes - Pork Cider & Apple Casserole

Ingredients:

  • 400g (1lb) loin pork
  • 1 tablespoon vegetable oil
  • ½ chopped onion
  • ½ celery stick (in mm slices)
  • ½ large tart chopped cooking apple (about 175g, 6oz when chopped)
  • I tablespoon plain flour
  • ½ cup dry or medium dry cider
  • ½ teaspoon dried thyme
  • 1 teaspoon dried sage
  • salt and freshly ground black pepper

Steps:

  1. Trim any excess fat off the pork and cut into 2 cm (1") cubes.
  2. Heat the oil in a large pan and gently fry the pork until lightly browned all sides. Transfer to the slow cooker bowl.
  3. Add the onion, celery, and apple to the pan and gently fry for 3 minutes. Stir in the flour and then gradually add the cider.
  4. Bring to the boil stirring continuously, and then add the herbs and seasoning. Transfer to the slow cooker bowl and mix well.
  5. Close the lid, and cook on low for 7-9 hours.
