  • 2  x  425g (15oz) cans Italian diced tomatoes
  • 1kg (16oz) frozen vegetables
  • 3  x  400g (14oz) cans beef liquid stock or homemade beef stock
  • 2 ribs celery, chopped
  • 2 potatoes, peeled, cubed
  • 1 teaspoon Italian herb seasoning
  • 2  x  425g (15oz) cans kidney beans, drained, rinsed
  • 2 teaspoons minced garlic


  1. Place the kidney beans in a pot fill with water and bring to a boil for 15 minutes, drain and rinsed. Allow to cool.
  2. In large, sprayed slow cooker, combine tomatoes, vegetables, stock, celery, potatoes, seasoning, beans, garlic and 1 cup (240 ml) water and mix well.
  3. Cover and cook on LOW for 4 to 6 hours. Serves 6 to 8
