Cooking time: 8-10 hours on Low or 4-5 hours on High

Ingredients:

  • 1 cup diced swede
  • 1 cup diced carrot
  • cup pot barley
  • 450g (1lb) lamb shanks, trimmed of fat cut into
  • 12mm ( inch pieces) reserve the bones.
  • 45g (1 oz) packet of onion soup mix

Steps:

  1. On a medium-high setting, heat greased large frying pan
  2. Add lamb and cook for 8 minutes, stir until browned.
  3. Transfer to a 4 to 5L slow cooker.
  4. Add 1 cups of water in the same frying pan.
  5. Heat and stir thoroughly until boiling. Stir in the lamb.
  6. Add carrots, swede, pot barley, onion soup, reserved bones and 5 cups of water.
  7. Sprinkle with salt and pepper to taste.
  8. Stir, cover and cook for 8 to 10 hours on Low or 4 to 5 hours on high.
  9. Discard the bones and serve.
