This recipe is great to make during the fall. Use fresh ingredients and enjoy the flavours of the season’s harvest. Serves 4 people

Ingredients:

  • 400g (1lb) chicken breast pieces
  • 1 large onion
  • 2 stalks celery
  • 2 large carrots
  • 1 acorn squash
  • 400ml (14oz) can of low-sodium chicken broth
  • 2 cloves garlic
  • ¼ teaspoon. salt
  • ¼ teaspoon. freshly ground black pepper
  • ½ teaspoon. nutmeg
  • ¼ teaspoon. cloves
  • 1 teaspoon. honey

Steps:

  1. Begin by chopping the onion, celery, and carrots into small pieces.
  2. Place the cut vegetables in the bottom of the slow cooker.
  3. Mince the garlic cloves and add to slow cooker.
  4. Place chicken breasts on top of vegetables in the slow cooker.
  5. Add chicken broth
  6. Peel the acorn squash and cut into 2cm pieces.
  7. Place squash on top of the chicken in the slow cooker.
  8. Sprinkle salt, pepper, nutmeg, and cloves over the ingredients in the slow cooker.
  9. Drizzle the honey over everything in the slow cooker.
  10. Set slow cooker to low, cover, and let cook for 6-8 hours.
  11. Serve warm and enjoy!
