  • 3 tablespoons onion soup mix, stir before using
  • 110g (4 oz) smoked ham sausage cut into 6 mm ( inch) slices
  • 2 cans of black-eyed peas, drained and rinsed
  • 800ml (28 oz) tomatoes, diced
  • 450g (1 lb) Lamb shank, trimmed of fat, meat cut into 2 cm ( inch) pieces, reserve the bones


  1. On a Medium-High setting, heat a greased frying pan.
  2. Add lamb and cook for 8 minutes, stirring gradually until browned on all sides.
  3. Transfer the contents to 4 or 5L slow cooker.
  4. Add tomatoes, black-eyed peas, sausage, onion and reserved bone. Stir.
  5. Cover and cook for 8 to 10 hours on Low or 4 to 5 hours on High.
  6. Remove and discard bone.
