Creamy Potato Soup Recipe

Cooking time:8 -10 hours on LOW setting

Ingredients:

  • 6 medium potatoes, peeled, cubed
  • 1 onion, minced
  • 2 x 400g (14oz) cans chicken liquid stock or homemade chicken stock
  • 230g (8oz) package shredded cheddar cheese
  • 1 cup unthickened cream

Steps:

  1. In slow cooker, combine potatoes, onion, chicken stock and ½ teaspoon (2 ml) pepper.
  2. Cover and cook on LOW for 8 to 10 hours.
  3. With potato masher, mash potatoes in slow cooker.
  4. About 1 hour before serving, stir in cheese and cream and cook 1 additional hour.
  5. Serves 4 to 6.

TIP: If don't like black specks in your soup, use white pepper.
