Cooking time: LOW 2 hours

Ingredients:

  • 1 small onion, minced
  • 3 - 4 cups grated courgette with peel
  • 2 x 400g (14oz) cans chicken liquid stock or homemade chicken stock
  • 1 teaspoon seasoned salt
  • 1 teaspoon dried dill
  • teaspoon white pepper
  • 2 tablespoons butter, melted
  • 225g (8oz) carton sour cream

Steps:

  1. In sprayed, small slow cooker, combine all ingredients except sour cream.
  2. Cover and cook on LOW for 2 hours.
  3. Fold in sour cream and continue cooking for about 10 minutes or just until soup is hot. Serves 4.
