This is a lovely, comforting dinner thatís perfect when itís cold or rainy out. It also makes a wonderful contribution to a potluck supper or to a friend who is under the weather. Serve with a cup of tea for a simple, perfect supper.


  • 3 lb (1.5kg) or 4 lb (2kg) cut-up boneless, skinless chicken pieces
  • 1 lb (500g) red potatoes cut into quarters
  • 2 cups peeled baby carrots
  • 1 onion chopped
  • 1 garlic cloves crushed
  • 1 cup chicken broth
  • 3 tablespoons cornstarch
  • Ĺ teaspoon dried thyme
  • 1 teaspoon salt
  • ľ teaspoon pepper
  • 10 oz (280g) frozen peas thawed
  • Ĺ cup heavy or whipping cream


  • Combine potatoes, carrots, onion, and garlic in slow cooker. Place chicken pieces on top.
  • Combine chicken broth, cornstarch, thyme, salt, and pepper and pour over chicken and vegetables.
  • Cover and cook 8 hours on Low setting or 6 hours on High setting.
  • When done, use a slotted spoon or spatula to transfer chicken and vegetables to deep serving platter or large baking dish. Cover to keep warm.
  • Stir peas and cream into liquid remaining in slow cooker and heat through. Spoon sauce over chicken and vegetables on platter.
