Slow Cooker Beef Recipes - Asian Ginger Beef

This recipe is a great twist on a beef dish. With Asian inspired flavours and healthy vegetables, this slow cooked beef meal is sure to please. Serve with rice or enjoy it on its own.

Ingredients:

  • 700g (1½ lb) boneless beef round steak
  • 4 medium carrots
  • 1 sweet red pepper
  • 2 cups sugar snap peas
  • ½ cup sliced chives (green onions)
  • 2 cloves garlic - minced
  • 1½ cups (375ml/12fl oz) water
  • 3 tablespoon. soy sauce
  • 1 teaspoon. sesame oil
  • 1 teaspoon. sugar
  • 2 teaspoon. fresh ginger - minced
  • 1 teaspoon. instant beef bouillon granules
  • ¼ teaspoon. crushed red pepper
  • 2 tablespoon. cornstarch

Steps:

  1. Begin by chopping the carrots into large pieces and the red pepper into slices.
  2. Cut the beef round steak into one-inch cubes.
  3. Add the beef, carrots, red pepper slices, green onions, and garlic to the slow cooker.
  4. Pour water over beef and vegetables.
  5. Add soy sauce, sesame oil, ginger, beef bouillon, and crushed red pepper to the slow cooker.
  6. Set the slow cooker to a low heat setting and cook for 9 to 10 hours. (Optional: for faster cooking, set on high heat for 4 to 5 hours)
  7. Once beef is cooked and tender, add cornstarch to slow cooker.
  8. Mix and continue cooking for thirty minutes.
  9. Add sugar snap peas to hot mixture and stir.
  10. Serve with rice and enjoy!
