Meatballs are great on their own as a main dish, or you can make
wonderful sandwiches on them on sandwich rolls. This recipe makes quite
a bit, so be prepared to feed a crowd or keep some for leftovers. Serve
with vegetables or salad, bread, and beer.
Ingredients:
- 1.4kg (3 lbs) lean ground beef
- 1 cup chopped onions, divided
- ½ cup fine dry seasoned bread crumbs
- 3 eggs
- 350 ml (12 fl.oz) beer
- 1 175ml (6 fl.oz) can spicy vegetable cocktail juice
- 1 teaspoon lemon juice
- 1 teaspoon hot sauce
- salt and pepper to taste
- 1 450g (16oz) bottle ketchup
- 1 teaspoon horseradish
- 1 teaspoon Worcestershire sauce
Steps:
- Combine beef, ½ cup onions, bread crumbs, and eggs and form into
small meatballs. Brown in a skillet on all sides (or bake in oven
until browned). Drain meatballs and discard drippings.
- Combine remaining ingredients in a saucepan. Bring just to a
boil, then lower heat and simmer 15 minutes over low heat.
- Put meatballs and sauce into slow cooker. Cover and cook on Low
setting for 4 to 6 hours, stirring occasionally.
