This mouthwatering soup is best if served with bread or rice.


  • 4 oz (110g) smoked ham diced
  • 19 oz (550g) skinless fish fillet
  • 20 scallops without roe
  • 3 large all-purpose potatoes cut into 1 cm ( inch) dice
  • 3 garlic cloves crushed
  • 2 leek thinly sliced (white part only)
  • 11 oz (300g) tinned baby clams undrained
  • 5 cups chicken stock or fish stock
  • 3 thyme sprigs
  • 1 bay leaf
  • 2 tablespoons chopped parsley
  • 2 cups whipping cream


  • Cut the fish fillets into 2.5 cm (1 inch) pieces.
  • Place into a platter, cover and refrigerate.
  • In a slow cooker, place the thyme, leek, bay leaf, garlic, potato, stock and ham.
  • Cook for 3 hours on High.
  • Add the clams, scallops, fish, cream and liquor.
  • Cook for another 30 minutes.
  • Add salt and pepper to taste.
  • Sprinkle with parsley and serve.
