Sublime Slow Cooker Scalloped Potatoes

Preparation time: 20 minutes (includes 15 minutes boiling time for potatoes)

Cooking time: 4 hours on Low setting

This is one of the best comfort food recipes, and it’s super easy, even for a beginner. If you want to turn this into a one-pot meal, simply mix in a cup or two of diced ham before serving. If you don’t have shredded cheddar, you can substitute four or five slices of processed cheese.

Ingredients:

  • 7 to 8 large potatoes, boiled, peeled and sliced
  • 1 cup milk
  • 1 cup reserved water from boiling potatoes
  • 1 teaspoon dry mustard
  • 1 teaspoon salt
  • ½ teaspoon onion powder
  • Ground pepper to taste
  • 1 cup shredded cheddar cheese

Steps

  1. Boil potatoes for 15 minutes. Drain all but 1 cup of water, and set that water aside.
  2. Slice potatoes and place in slow cooker.
  3. In a bowl, combine reserved water, milk, dry mustard, salt, onion powder, and pepper. Pour over potatoes in slow cooker.
  4. Cover and cook on Low setting for 4 hours
  5. Top with cheese before serving.
