Savory Slow Cooker Barley Stew

You’d be hard pressed to find a simpler, more nutritious stew for
supper. Served alongside crusty bread or cornbread, it’s hearty and
nourishing, yet it’s light enough you won’t feel guilty indulging in a
decadent dessert afterwards!
Ingredients:
- 1 cup pearl barley
- 5 cups vegetable or chicken broth
- 1 large onion, chopped
- 2 medium to large potatoes, cut in chunks
- 1 medium sweet potato, cut in chunks
- 230g (½ lb) Brussels sprouts
- 1 tablespoon soy sauce
- 1 teaspoon parsley flakes
- 1 teaspoon oregano
- ½ teaspoon dill weed
- 2 medium tomatoes, cut in wedges
Steps
- Place all ingredients except for tomatoes into slow cooker.
- Cover and cook on Low setting for approximately 5 to 6 hours
- Add tomatoes and cook, covered, for another 10 minutes.
