Savory Slow Cooker Barley Stew

Cooking time: 5 to 6 hours, plus 10 minutes on Low setting

You’d be hard pressed to find a simpler, more nutritious stew for supper. Served alongside crusty bread or cornbread, it’s hearty and nourishing, yet it’s light enough you won’t feel guilty indulging in a decadent dessert afterwards!

Ingredients:

  • 1 cup pearl barley
  • 5 cups vegetable or chicken broth
  • 1 large onion, chopped
  • 2 medium to large potatoes, cut in chunks
  • 1 medium sweet potato, cut in chunks
  • 230g (½ lb) Brussels sprouts
  • 1 tablespoon soy sauce
  • 1 teaspoon parsley flakes
  • 1 teaspoon oregano
  • ½ teaspoon dill weed
  • 2 medium tomatoes, cut in wedges

Steps

  1. Place all ingredients except for tomatoes into slow cooker.
  2. Cover and cook on Low setting for approximately 5 to 6 hours
  3. Add tomatoes and cook, covered, for another 10 minutes.
