  • 1 tablespoon lemon juice
  • 3 tablespoons fresh parsley, chopped
  • 3 cups fresh spinach stems removed, lightly packed
  • 2 chorizo sausages casings removed, chopped
  • 1 teaspoon cooking oil
  • teaspoon pepper
  • 2 tablespoons sweet or chilli sauce
  • 2 cups sweet potatoes chopped
  • 19 oz (550g) can of cannellini beans rinsed and drained
  • 5 cups Liquid chicken stock (prepared chicken broth)
  • 2 garlic cloves minced
  • 1 cup chopped onions
  • 2 bacon slices, diced


  • In a medium frying pan, cook bacon on High until crisp. Remove to paper towels to drain.
  • Remove and discard drippings and reserve 1 tablespoon in pan.
  • Add onion and cook for 5 to 10 minutes, stirring continuously until softened.
  • Add garlic. Heat and stir for 1 minute until fragrant.
  • Transfer to 3.5 to 4L slow cooker.
  • Add bacon, liquid chicken stock, cannellini beans, sweet potato, sweet or chilli sauce and pepper. Stir thoroughly.
  • Cover and cook for 8 to 10 hours on Low or 4 to 5 hours on high.
  • In the same medium size frying pan, heat cooking oil on Medium setting.
  • Add sausage, cook and stir continuously for 8 to 10 minutes. Drain.
  • Add to bean mixture. Stir.
  • Add parsley and spinach, stirring well.
  • Cover and cook for 5 minutes on High until spinach is wilted.
  • Add lemon juice, stir well and serve.
