fresh parsley, chopped
stems removed, lightly packed
casings removed, chopped
sweet or chilli sauce
19 oz (550g)
rinsed and drained
(prepared chicken broth)
In a medium frying pan, cook bacon on High until crisp. Remove
to paper towels to drain.
Remove and discard drippings and reserve 1 tablespoon in pan.
Add onion and cook for 5 to 10 minutes, stirring continuously
Add garlic. Heat and stir for 1 minute until fragrant.
Transfer to 3.5 to 4L slow cooker.
Add bacon, liquid chicken stock, cannellini beans, sweet potato,
sweet or chilli sauce and pepper. Stir thoroughly.
Cover and cook for 8 to 10 hours on Low or 4 to 5 hours on high.
In the same medium size frying pan, heat cooking oil on Medium
Add sausage, cook and stir continuously for 8 to 10 minutes.
Add to bean mixture. Stir.
Add parsley and spinach, stirring well.
Cover and cook for 5 minutes on High until spinach is wilted.
Add lemon juice, stir well and serve.
