  • lb (340 g) hot Italian sausage with no casing
  • 28oz (800g) diced tomatoes in can (with juice)
  • 4 cups lightly packed kale leaves chopped
  • cup basil pesto
  • 19 oz (550g) can of black-eyed peas


  • In a large frying pan, scramble-fry the sausage for 10 minutes over medium heat.
  • Drain and transfer the sausage to a 4 to 5L slow cooker.
  • Add the kale leaves, diced tomatoes, black-eyed peas and 4 cups of water. Stir.
  • Cover and cook for 9 to 10 hours on low or 4 to 5 hours on high.
  • Break the mixture up using potato masher.
  • Add pesto and stir.
