Slow Cooker Sausage Casserole Mexican Style

Ingredients:

• 450g (1 lb) spicy ground sausage
• Nonstick cooking spray
• ¾ cup cornmeal
• 1½ cups milk
• 1 egg
• 1 400g (14.5oz) can diced tomatoes and green chilies
• 1 cup frozen corn
• 1 35g (1¼oz) packet taco seasoning mix
• 1 cup shredded Mexican blend cheese

Steps:

1. Crumble sausage and brown in a skillet over medium heat.
2. Spray inside of slow cooker with nonstick cooking spray. Place sausage into slow cooker.
3. Combine cornmeal, milk, and egg in a bowl. Stir mixture into sausage.
4. Add tomatoes, corn, and taco seasoning and stir.
5. Cover and cook on Low setting 4 to 6 hours.
6. Top with shredded cheese before serving.
