Slow Cooker Sausage Casserole Mexican Style

Ingredients:
- 450g (1 lb) spicy ground sausage
- Nonstick cooking spray
- ľ cup cornmeal
- 1˝ cups milk
- 1 egg
- 1 400g (14.5oz) can diced tomatoes and green chilies
- 1 cup frozen corn
- 1 35g (1Ľoz) packet taco seasoning mix
- 1 cup shredded Mexican blend cheese
Steps:
- Crumble sausage and brown in a skillet over medium heat.
- Spray inside of slow cooker with nonstick cooking spray. Place
sausage into slow cooker.
- Combine cornmeal, milk, and egg in a bowl. Stir mixture into
sausage.
- Add tomatoes, corn, and taco seasoning and stir.
- Cover and cook on Low setting 4 to 6 hours.
- Top with shredded cheese before serving.
