Slow Cooker Salmon with Caramelised Onions and Carrots

Slow Cooker Size 3.5L+

Ingredients

  • 1 lb (500g) salmon fillet
  • 16 oz (450 g) bag of baby carrots
  • 2 tablespoons olive oil
  • 4 onions chopped
  • 2 tablespoons butter
  • 4 garlic cloves minced
  • teaspoon dried dill weed
  • teaspoon salt
  • 1/8 teaspoon pepper

Steps:

  • Place the butter and olive oil in the slow cooker.
  • Add the baby carrots, garlic and onions.
  • Stir, cover and cook for 6 to 7 hours on low heat until vegetables are caramelised.
  • Place the fillet in the slow cooker, add the dill weed, pepper and salt.
  • Cover and cook for another 1 to 2 hours on low until fillets are well done.
  • Transfer into the serving plate and garnish with sliced onions.
  • Serve.
