Saffron-Baked Potatoes

Cooking time: 4-5 hours LOW

Boiled potatoes will turn out to be a great snack that the whole family would surely love. Simply cook them slowly with saffron, garlic and spices then serve with matching pork barbeque or fish steaks.

Ingredients:

  • 1kg (2˝lb) potatoes scrubbed and cut into small pieces (choose fresh potatoes)
  • Large pinch of saffron threads
  • 2 tablespoon olive oil
  • 1 sliced onions
  • 1 teaspoon cumin seeds ( crushed)
  • 1 teaspoon coriander seeds (crushed)
  • ˝ teaspoon turmeric
  • 2 chopped garlic cloves
  • 450ml (14fl oz) chicken stock or vegetable stock
  • 50 g (2oz) sultanas
  • ˝ teaspoon salt
  • pepper

Steps:

  1. Preheat your cooker. While heating oil in a frying pan, mix in onion and fry stirring and let cook for 5 minutes.
  2. Add coriander seeds and crushed cumin with the onion saffron, turmeric and garlic. Let cook for 1 minute. Pour the stock and add sultanas, salt, and sprinkle a little bit of pepper. Bring to a boil while stirring.
  3. Pour the mixture into the pot and add the potato chunks. The chunks should be covered entirely. Place a lid on top and cook on low heat for 4 to 5 hours.
  4. Serve up to 6 servings
