Primo Pumpkin Pie Pudding

Cooking time: 6-7 hours on LOW setting

For some reason, a lot of Brits are averse to desserts made with pumpkin, but if you haven’t tried pumpkin, you really should! Not only is this decadent pumpkin pudding rich delicious, and easy to make it’s absolutely packed with vitamin A. Perfect after a meal with coffee or a glass of milk.

Ingredients:

  • 1 340g (12oz) can evaporated milk
  • 1 425g (15oz) can solid pack pumpkin
  • ¾ cup sugar
  • ½ cup biscuit/baking mix (You can get Betty Crocker “Bisquick” mix in UK supermarkets)
  • 2 eggs, beaten
  • 2 tablespoon butter or margarine, melted
  • 1 teaspoon cinnamon
  • 1 teaspoon nutmeg
  • 2 teaspoon vanilla extract
  • Nonstick cooking spray
  • whipped topping

Steps:

  1. Combine all ingredients except for whipped topping and cooking spray in a large bowl.
  2. Spray inside of slow cooker with nonstick cooking spray.
  3. Place ingredient mixture into slow cooker. Cover and cook on Low setting for 6 to 7 hours.
  4. Check that it’s done by using a food thermometer. The thermometer should read 70C or more. Sever with whipped topping.
