Ingredients:
- 400g (1lb) loin pork
- 1 tablespoon vegetable oil
- ½ chopped onion
- ½ celery stick (in mm slices)
- ½ large tart chopped cooking apple (about 175g, 6oz when chopped)
- I tablespoon plain flour
- ½ cup dry or medium dry cider
- ½ teaspoon dried thyme
- 1 teaspoon dried sage
- salt and freshly ground black pepper
Steps:
- Trim any excess fat off the pork and cut into 2 cm (1") cubes.
- Heat the oil in a large pan and gently fry the pork until
lightly browned all sides. Transfer to the slow cooker bowl.
- Add the onion, celery, and apple to the pan and gently fry for 3
minutes. Stir in the flour and then gradually add the cider.
- Bring to the boil stirring continuously, and then add the herbs
and seasoning. Transfer to the slow cooker bowl and mix well.
- Close the lid, and cook on low for 7-9 hours.
