Made this dish last weekend. really nice and tasted lovely, however; I think it needed more spice and I added some plums I had to the mix as well really made the dish!

Mellow spiced-flavour golden colour casserole is easy to prepare. Serve this dish with dried fruits. Perfect for supper!

Ingredients

  • 4 chicken thighs
  • 4 chicken drumsticks
  • 2 tablespoons olive oil
  • 2 tablespoons (all-purpose) plain flour
  • 1 teaspoon turmeric
  • 1 teaspoon paprika
  • 1 onion
  • 2 or 3 garlic cloves
  • 4 cloves
  • 1 piece of root ginger finely chopped
  • 450 ml (14 fl oz) chicken stock
  • 4 oz (110g) young spinach
  • salt and pepper

Steps:

  • Preheat your cooker. Use your knife to place slithers into the chicken 2 or 3 times. Mix flour, turmeric and paprika on one plate. Use mix to coat chicken.
  • Heat oil in frying pan and add chicken. Fry until brown on both sides. Place on plate and add onion and garlic. Fry stir for 5 minutes until light brown.
  • Stir remaining spiced flour and add cloves, ginger, stock, and salt and pepper. Bring to a boil.
  • Place chicken in cooker and pour stock mixture. Replace the lid and let cook for 8-9 hours.
  • Add spinach 20 minutes before serving.
