MY first slow cooker attempt.
Not bad, but meat a bit dry in the middle.
Rereading the recipe I know why - I missed the "8-10 hours onLow setting" Doh!

used this recipe but made it with a rack of pork ribs, got to say it was incredible !!!

Cooking time: 8-10 hours on Low setting

This slow cooker dish is an Italian – inspired. Served with mashed potatoes or creamy soft polenta, perfect to choosy taste!

Ingredients:

  • 1 tablespoon olive oil
  • 700g (1˝lb) boneless pork chops (4 pieces)
  • 1 chopped onion (large)
  • 1 sliced red pepper
  • 2 chopped garlic cloves
  • 2 tablespoon flour (plain)
  • 400 g (13floz) chop tomatoes (1 can)
  • 200ml (7fl oz) chicken stock
  • A small number of thyme sprigs
  • Salt and pepper
  • Mashed potatoes

Steps:

  1. Preheat your cooker. Heat oil in frying pan and add pork chops. Make sure they are brown on both sides and place on plate.
  2. Add onions and stir fry 5 minutes until brown. Add peppers and garlic then fry for one minute. Mix flour and canned tomatoes, stock and thyme. Add seasoning with salt and pepper and bring to a boil.
  3. Place pork chops in slow cooker and cover in tomato mix. Replace the lid and cook on low heat for 8-10 hours. Spoon onto plates on a bed of mash.
  4. Make 4 servings
