Hi folks, I make 'normal' porridge just for me with 1/2 cup oats and 2 cups milk (or water) put into a small pyrex casserole dish with its lid on, resting on two thin 1/2" thick wooden battens and then surrounded with water up to the level of the mixture, low heat overnight. Maybe if you can find a similar dish that fits the same in your slow cooker then you can downsize the quantities more easily? (Mine's a Tesco 3 1/2 Litre cooker and the dish is 2 1/2 cups or 700ml, 1 1/4 pint, 25fl oz)

Has anyone tried making the spiced oatmeal with fruit and nuts and saving some for another day, whether freezing or simply refrigerating. I would love to make but am the only one to eat porridge but with a large slow cooker it is a bit hard to cut down the recipe.

I agree wholeheartedly Keith. I cook for one person, me and I am at a loss as to the quantities needed to avoid an over kill!

Like the recipes but they do not always say for how many people each recipe is for, needs to be listed so we can adjust for numbers

Spiced Oatmeal with Fruit and Nuts

Slow Cooker Size 3.5L+
Serves: 4
Cooking time: 8 hours on LOW

The perfect hearty breakfast for cold mornings.

Ingredients:

  • 2 cups steel cut oats (Irish oats)
  • ½ cup chopped pecans
  • ½ cup slivered almonds
  • 1 cup dried cranberries
  • 2 cups diced apple
  • 3 cups water
  • 1 cup milk
  • 1 tablespoon ground cinnamon
  • 1 teaspoon pumpkin pie spice (or ½ teaspoon ginger + ¼ teaspoon cloves)
  • 1 tablespoon butter

Steps:

  1. Combine all ingredients in slow cooker and stir to combine.
  2. Cook, covered, on Low for 8 hours
